Grab your grinder and grind the mixture down until you create a coarse paste. Balance is key here. You do not want to grind the paste too much and run the risk of it being too smooth, but you also do not want to underdo it and run the risk of the mixture being too coarse. Grind it until there are only small lumps.
The reason why you need to get the consistency just right is that if it is too smooth, it does not create a good texture, or if you leave it too coarse, then the pastry will not puff up when it comes to frying!
Step 3 – Create Your Flavoring
From here, you will want to grab your atta, your sooji, and the red chili powder and mix them all together, with a pinch of salt, in a bowl. Mix them together to get them evenly mixed up.
Once you have created the mixture of spices, you will then want to grab your ground urad dal and mix it thoroughly into the flavoring mix.
Keep kneading the mixture into the puri, while also adding the occasional splash of water. This helps to ensure that the dough remains malleable and usable. Keep kneading until you are left with a dough that is relatively stiff yet has a good amount of softness to it.
Once you have completed your dough, you will want to allow it to rest for around 30 minutes. Cover it up, and leave it on your kitchen counter to rest.
It is important to allow the completed dough to rest because it allows the bonds of the dough to strengthen up, which creates a more malleable dough that will not tear when it comes to frying.
Step 4 – Create Portions
Once you have allowed the dough to rest for around 30 minutes, uncover it and knead it around two more times to ensure that it is really smooth.
Now, you are going to want to take your dough and tear away at it to create 18 equal portions. Take these portions and roll them in your palms to create small round balls before then flattening them down.
Take each flattened puri ball and a rolling pin, and roll them until they are flat and at around 3 and ½ inches in diameter. This is crucial for ensuring that the pastry does not become too thin and run the risk of tearing.
Place each flattened puri to the side, ready for frying!
Step 5 – Get Frying!
Now, you will want to grab your frying pan, pour in a good helping of oil, and heat it up in order to begin deep frying. Set the stove to high and wait for the oil to begin heating up.
Once you notice that the oil is hot, grab one of your puri and drop it right into the oil. You should begin to hear it sizzling right away. Lightly move the puri round in a circular motion, using your spoon, to ensure that it gets evenly cooked all over.
You will eventually begin to notice the pastry puffing up and rising slightly. Keep cooking until it turns to a nice golden brown color on the bottom side. Once the bottom side has turned golden, you will then want to flip the puri over and fry the opposite side until it also turns golden brown and has a crispy texture.
Once each puri has been fried, remove it from the pan and place it onto a paper towel to drain out a little bit of the excess oil.
