For the zucchini layers:
- 3 medium zucchini
- ¼ teaspoon sea salt
For the cashew filling:
- 1½ cups raw cashews
- 2 tablespoons fresh lemon juice
- 2 tablespoons nutritional yeast, optional
- 1 small garlic clove
- ½ teaspoon sea salt
- ⅓ to ½ cup water
For the tomato sauce:
- 2 cups ripe tomatoes, roughly chopped
- ⅓ cup sun-dried tomatoes, labeled raw, soaked if firm

- ½ cucumber, diced
- ¼ cup finely diced red onion
- ¼ cup chopped raw olives
- ¼ cup raw sunflower seeds
- ¼ cup chopped fresh parsley
- 2 tablespoons chopped fresh mint
For the dressing:
- ¼ cup raw tahini
- 2 tablespoons fresh lemon juice
- 1 small garlic clove, finely grated
- 3 to 5 tablespoons water
