  • 2 tablespoons oil
  • 2 cups multigrain or whole wheat flour
  • 1 teaspoon ginger (grated)

Step 1 – Cook Sweet Potato

To start, cut your sweet potato in half and pressure cook for three whistles or until it is cooked well. Add some salt to the potatoes while they cook.

Allow to cool once cooked and peel the skin. You can then either mash or grate the sweet potato.

Step 2 – Add Spices

Next, take a bowl and add your wheat flour and sweet potato. Add the coriander leaves, turmeric powder, red chili powder, garam masala, ajwain, ginger, cumin, oil, and salt. Mix well to ensure the sweet potato is covered in the spices.

Step 3 – Add Water

Add some water to the bowl. You want to make a smooth dough here that is not sticky. You should not need much water to do this.

Smear some oil on the dough. Allow it to rest for ten to fifteen minutes.

Step 4 – Make Balls

Once the dough has rested, split the dough and roll it into balls. We were able to get six balls from the dough, but you might get more or less depending on the size of the balls you made.

Step 5 – Roll

Take your balls one at a time and roll in a dusting of dry flour. You want the parathas to be semi-thick/thin once you have finished rolling.

Step 6 – Cook

Take a skillet or tawa and heat over medium heat. Place the paratha on the skillet and leave it to cook.

Once bubbles form, flip the paratha. Drizzle some oil on top. Flip the paratha again and add oil to the other side. Continue to do so until there are golden spots on both sides.

Make sure you stay by your parathas while you do this. You don’t want to leave them on for too long, and they burn!

Step 7 – Serve

Once cooked, remove from the heat and serve! They work well with some pickle, raita, ketchup, or gravy of your choice!

Cook Your Sweet Potatoes Properly

Your sweet potatoes need to be perfectly cooked; otherwise, you will have a nightmare trying to grate or mash them! You want a knife to slide through your sweet potato easily. If there is some resistance or pressure when you try to slide a knife through, it needs longer to cook.

Chop Larger Sweet Potatoes

Our recipe calls for sweet potatoes to be halved before cooking. For larger sweet potatoes, we recommend quartering or cutting them even smaller. This not only ensures that they cook but speeds up the cooking time!

Smaller chunks of sweet potato will cook quicker, shaving some of the cooking time from the dish, which is perfect for when you are in a hurry! You will find that smaller chunks of sweet potato are harder to handle and grate (without grating a finger, too), so we recommend mashing them if you cut your sweet potato smaller.

Add Sugar

If you like your parathas sweet, you can add a little sugar to the mixture when you add your spices. It is worth noting that your sweet potato will naturally sweeten the paratha, but for anyone with a super sweet tooth, a dusting of sugar or jaggery can be added.

We mentioned this earlier, but you can adjust the spice quantity as needed to suit your tastes. The sweet potato does sweeten the paratha, so you might want to add more spices to counter the sweetness.

The choice is yours here, but if you do add spices, we recommend starting with half a teaspoon and increasing it gradually until you are happy with the spice level.
